A wine cellar can be kept at the optimum temperature using the passive ventilation or a mechanical climate control system. An underground cellar can be kept at a stable temperature by insulating the space with a high thermally rated insulating material, such as PIR (Polyisocyanurate) Rigid Thermal Insulation Panels or XPS (Extruded Polystyrene) Board. This will not cool the space but assist in maintaining a stable environment. A mechanical climate control system will assist to achieve the recommended temperature range of 14-16 deg Celsius.
